1 cup plain flour
1/2 cup white sugar
1/2 cup shredded coconut
125g melted butter
4 egg yolks
400ml condensed milk
5 limes, juiced
1. To make to crust, mix melted butter, flour, sugar and coconut. Press evenly into a pie dish. Bake in a preheated oven at 175C for 10 minutes.
2. Meanwhile, wisk the egg yolks and add the condensed milk until smooth. Add lime juice and the pour into the pie crust.
3. Return to the oven and cook for 15 minutes. Cool on a wire rack then refrigerate for 6 hours.
4. Serve with whipped cream if you like, or enjoy a slice or two as it is for morning tea!
